Our banana split cupcake!
Which version was voted most like a banana split? The cupcake on the left! The rainbow-sprinkle topped treat was built Neapolitan-style, with 4 layers of cake-banana, chocolate, vanilla, strawberry. It was topped with whipped cream and rainbow sprinkles. On the right, my fave, we had a banana cake infused with chocolate chips, topped with vanilla buttercrem, a strawberry, and chocolate spinkles. The biggest reason the kids chose the other cupcake was the vanilla buttercream was too sweet. But the vote was nearly even, so several of the kids preferred the sophisticated cupcake!
P.S. Please don't hate on these cupcakes. They were 100% crafted by children aged 5-12 years old. Kindergartners garnished with sprinkles enthusiastically, and one even plated them ("Remember Miss Adrienne! You told me I'M PLATING.")
P.P.S. We created the banana cake by taking a yellow cake mix and adding a banana cream pudding mix. If I had remembered to bring it, I would've thrown a little banana extract in as well, and voila! Banana cake!
